Best Boxed Mac and Cheese

This recipe is one that has been in my recipe box for quite some time. It was one of the first dishes I really created. Hence the "boxed macaroni and cheese". I am a true believer that there are some things that you should just have in your pantry. Boxed macaroni and cheese and boxed brownie mix are two of them.
I was eighteen when this recipe was born. It was 11pm without any planned ingredients on hand.
My good friend Sabrina came over one night after work. It was like 11pm or some crazy late time. She was super hungry and needed some comfort food stat. Everyone has those nights where they are dog tired and just want to sit on the couch with a warm bowl of food and fall asleep there. It was one of those kind of nights for sure. I scurried through the pantry and this box of white cheddar macaroni and cheese was really all I had on hand. I through a few mushrooms, some garlic, fresh herbs and leftover bacon from this morning in it. Sort of the 'Everything but the kitchen sink' mac & cheese. If you've never had white cheddar macaroni and cheese give it a go!

A lot of people in my little circle have really loved this dish and I hope you love it as much :) You can add so much to boxed macaroni and cheese but this is my fav combo!
Boxed White Cheddar Mac and Cheese
1 Box of pasta roni white cheddar mac & cheese (butter + milk needed for box recipe)
8 Mushrooms thinly sliced
2 Tbs of unsalted butter
1/2 Red onion thinly sliced
3 Cloves of garlic minced
2 Tbs of olive oil
2 Strips of crispy bacon
1 Tablespoon of fresh rosemary
2 Tsp of black pepper
2 Tsp of salt
1/2 Cup of panko bread crumbs
*optional 1 Cup of your favorite shredded cheese
I love smoked gouda ;)
In a medium pan heat 2tbs of butter until sizzling. Add in mushrooms and cook by themselves to ensure browning. In another pan add in 2tbs of olive oil, thinly sliced onions, minced garlic and 1tsp of salt + pepper. Brown your onions and garlic on medium heat until onions are translucent and ribbon-y. Cook mushrooms until crispy and brown.
Follow directions on box of white cheddar mac & cheese and be sure to let stand a few minutes to thicken. Add in onion + garlic mixture, bacon, mushrooms, and rosemary. Top with panko bread crumbs.
