You guys! Two days! Two days till Thanksgiving! Holy moly man. I feel like I’ll just blink and it will suddenly be Valentines day. Last night at Target I saw SOOO many people in the kitchen isles. Scrambling to find a turkey timer and a huge disposable roasting pan. For all of you cooking Thanksgiving on Thursday I am sending you one large cyber good luck.
I have only made Thanksgiving dinner once… for like the WHOLE family. I was 18 and working at Williams Sonoma as just a normal sales associate. This is when I first dove into the cooking world and realized how easily it was to fall in love with.
Needless to say I was quite naive and thought I would cook the Turkey with the right hand and the mashed potatoes with my left and all would be well. IT. WAS. TOUGH.
Like I should have been doing push ups for 6 weeks beforehand. By the end of it I felt like I would fall apart at any minute.
There should be some kind of law in motion that if you look Thanksgiving dinner the only dish you should pick up after is your own! Agreed?! Agreed!

They are crafted so carefully and I can quite honestly plop them in a bowl, add some dressing, and I’m good. For the salad featured … I added on some seasonal fall produce to spice it up for Thanksgiving. Things like persimmons, apples, pecans, and pomegranate seeds are great additions!
For the cauliflower mash I also made it easy on myself and used Taylor Farm’s Cauliflower Pearls. The name alone gets me all giddy! My favorite dishes like EVER are the ones that are healthy but taste so sinful! This cauliflower mash is nice and creamy but its easy on the carbs and STILL packed with a flavor punch.

Slow Roasted Garlic Mashed Cauliflower
2 Bags of Taylor Farm’s Cauliflower Pearls
1 Cup of Creme Fraiche
1/2 Cup of whole milk
1-2 Tablespoons of fresh minced rosemary
1/2 Teaspoon of freshly cracked pepper
2 Teaspoon of kosher salt
1/4 Cup of melted butter, optional
1 Whole garlic head
Preheat oven for 425 degrees Fahrenheit
Slice off a third of garlic head. Place in tin foil, drizzle with a generous amount of olive oil and wrap in foil. Place on a baking sheet and bake for 35-40 minutes or until tender. Remove from oven and let cool.
Steam cauliflower pears according to package directions in microwave. Mash pearls with milk, creme faiche, rosemary, salt, pepper until creamy. Add in slow roasted garlic (**note this amount is to your preference, 5-6 cloves is a medium amount). Top with melted butter, optional.
