This summer I have felt like a mad scientist in the kitchen with my ice cream maker. An ice cream maker has always been on my dream appliance list and I don’t know why I have JUST gotten around to getting one (they’re so affordable!) but I couldn’t be happier with my kitchen addition.
Making ice cream in science class as a kid was always a highlight of the year for me. I HATED math and science classes but the day we got to play around making ice cream with those chunky ice cream salt rocks was the absolute best. I’m a firm believer of letting kids focus more on what they are interested in. I’m so grateful my parents always let me play around in the kitchen and make a hot mess doing so (sorry mom!). I still think that moments like that are why I love being creative as an adult! Our kitchen was pretty stocked but one thing we didn’t have was an ice cream maker! So… naturally I am feeling like a kid again with my new appliance!
We have been trying out everything! Last week we played around with a few healthy fro yo and sorbet recipes and this week’s recipe was this dreamy mocha almond biscuit fudge ice cream recipe. Mocha almond fudge is one of my top three favorite ice cream flavors (aside from chocolate peanut butter and chocolate chip cookie dough). There isn’t a bowl of ice cream that I don’t like to crumble a cookie or biscuit over so I was thrilled to take this classic recipe and give it a personal twist. Plus, when Tim Tam ® reached out asking to partner for a fun summer recipe I COULDN’T say no!

The base of the ice cream is a rich and cream chocolate espresso. I honestly could have just eaten the ice cream as is, it was so rich and flavorful! Making ice cream homemade really does take ice cream to a new level. Towards the end of the churning process we studded the chocolate espresso base with roasted almonds, fudge swirls and crush Tim Tam biscuits!
When it comes to making ice cream at home I have realize that one, it’s a pretty simple process made with simple ingredients. And two! The quality of your ingredients really do matter! Because the recipe comes together in just a few ingredients try to use good quality cocoa powders, vanilla extracts, mix in’s etc! I know I’m sounding a lot like Ina Garten but it really will make a different. Scroll down to catch this easy mocha almond biscuit fudge ice cream!
Mocha Almond Cookie Fudge Ice Cream
3/4 Cup of cocoa powder
1/2 Cup of granulated sugar
1/3 Cup of dark brown sugar
Pinch of kosher salt
1 Cup of whole milk
2 Cups of heavy cream
2-3 Tablespoons of instant espresso powder
1/2 Tablespoon of pure vanilla extract
6 Tim Tam Biscuits, crushed +more for topping
1 Cup of roasted almonds
Hot Fudge (we used a store bought jar)
In a medium bowl, whisk together the cocoa, sugars and salt. Add in the milk and with a hand or stand mixer whisk ingredients to combine. Beat until all ingredients have dissolved. Stir in the heavy cream, instant espresso powder and vanilla. Cover mixture and refrigerate for 30 minutes to 1 hour.
Turn on your ice cream maker with pre frozen bowl and pour the mixture into freezer bowl. Let mixture thicken and churn for 10 minutes. After ten minutes slowly add in roasted almonds and crushed tim tam biscuits. Churn for an additional 2 minutes. The ice cream will have a soft and creamy texture. Transfer the ice cream to a metal loaf pan or air tight container. Drizzle top with about 1 cup of hot fudge and gently swirl it into ice cream. Place pan into the freezer and freeze for 2 hours. Serve with more hot fudge and whole Tim Tam ® biscuits!
