Pumpkin Spice French Toast is one of my favorite easy fall breakfast recipes! This brunch french toast recipe is laced with pumpkin, cinnamon and topped with a decadent whipped maple butter. This is a perfect recipe for slow fall mornings cozied up with your favorite blanket and a Halloween movie! Enjoy!



8 Thick slices of french bread
6 Whole eggs
1/4 Cup of half and half or milk
1/2 Cup of pumpkin puree
2 Teaspoons of pumpkin pie spice
1 Teaspoon of vanilla extract
1/2 Cup of unsalted butter, softened +more for frying
2 Tablespoons of pure maple syrup +more for serving
1 Cup of chopped pecans


  1. Place unsalted softened butter and 2 tablespoons of pure maple syrup into a large bowl fitted with a stand mixer and a whip attachment. Whip together butter and syrup for 30-60 seconds or until light and fluffy. Set aside or into the refrigerator until serving.
  2. In a large shallow bowl whisk together whole eggs, half and half, pumpkin puree, pumpkin pie spice, and vanilla extract for 1-2 minutes or until eggs are broken and whisked to a smooth consistency. Dip each slice of bread into the pumpkin egg mixture for 20-30 seconds. Heat a cast iron pan on medium heat with 2 Tablespoons of butter until melted. Add in 2 slices of french toast at a time and fry for 2-3 minutes on each side or until golden brown.
  3. Serve slices with warm maple syrup, whipped maple butter, and a sprinkle of chopped pecans.
