Deconstructed Guacamole Salad

Description

A chunky and fresh deconstructed guacamole salad. Basically, #lazygirlguac. Big chunks of creamy, cubed avocado, heirloom tomatoes, red onion, cilantro, and fresh lime juice. Perfect as is, with chips and guac or topped on a burrito.


Ingredients

Scale

45 Medium Avocados, diced
1 A cup of heirloom cherry tomatoes, halved
1/2 Small Red onion, diced
3 Garlic cloves, minced
A handful of cilantro, chopped

Juice of two limes
Salt to taste


Instructions

In a large bowl gently toss the avocado, cherry tomatoes, red onion, garlic, cilantro, lime juice and season with salt to taste. I usually add in 1-2 teaspoons. 

Serve immediately or press plastic wrap against the salad and place in the refrigerator until serving.
