How to make American Flag Pie

4th of July is finally here! It’s only one of my favorite holidays EVER!

Ever since I can remember, the 4th of July was always a big deal. When I was a kid we would have a big pool/bbq parties every single year and around dusk, we would break out fireworks. I’m talking like hundreds of dollars of fireworks. We never did big family vacations but I always remember holidays feeling super special. 

It’s one of the only holidays that I love breaking out the cheesy, themed desserts. I’m talking red white and blue cakes, anything with patriotic sprinkles and today’s American flag pie. Because nothing is more American than pie on 4th of July! 

Last year we had a fun 4th of July tablescape set up and made tons of smeaches! This year I’m keeping it low key (I plan on spending the entire day in the pool) with bbq chicken coleslaw salads and American Flag pie!

How to make an American flag pie? 

  • Start with the berries! I decided to go with blueberries for the top of the left corner for the ‘stars’ and strawberries for the ‘stripes’ of the pie!
  • Pick your pan! You can use a regular circle pie pan or a smaller cookie sheet (mine was 9X13) for the full flag effect.
  • Line your pie pan with pie crust and then create a ‘dam’ for the star portion of the pie. I layered up three pie dough ropes on top of each other and pressed them together to create a sturdy base. 
  • Filler her up! Once the pie is lined with pie crust begin to fill in your two pie sections. 
  • Don’t forget the stars and stripes: I used a simple star cookie cutter to create the stars and a pizza cutter to create the long stripes. 
  • The edges: I decided to do a fancy pie dough braid but you can keep it simple with a crimp. 
  • Bake: Brush everything off with an egg wash mixture and bake!

What fruit should I use in an American flag pie?

Berries! I used a mixture of berries to create a full flag effect. Any mixture of strawberries, cherries, and raspberries will work great in the stripe section. Blackberries and blueberries will create a rich blue hue for the star section.

How to make American Flag Pie


Description

Ingredients

Scale
For Strawberries:
2 Lbs of strawberries
1/2 Cup of granulated sugar
Zest and juice of one lemon
2 Teaspoons of cinnamon
5 Tablespoons of corn starch
For Blueberries:
1 Pint of blueberries
4 Tablespoons of granulated sugar
1/2 Teaspoon of cinnamon
Zest and juice of a 1/4 of a lemon
2 Tablespoons of corn starch
For Crust:
3 Prepared pie dough disks (from scratch or pre-made)
1 Egg
1 Tablespoon of milk or cream

Instructions

Preheat oven to 450 F.

In a large mixing bowl toss strawberries, granulated sugar, lemon zest & juice, cinnamon, and corn starch.

In a small separate bowl mix together blueberries, sugar, cinnamon, zest and lemon juice, and corn starch.
 
Arrange two pie dough disks on the bottom of the baking sheet. Create (3) 10-inch pie dough ropes and stack them onto each other in a square in the top left corner for the ‘star’ section. Fill in two separate sections with blueberries and strawberries. 
 
With the third pie dough disk create ‘stars’ with a cookie cutter and use a pizza cutter to create ‘stripes’. Arrange pie dough to create a flag. In a small bowl whisk together egg and cream. Use a pastry brush to brush all dough with egg wash. 
 
Bake at 450 F for 15 minutes and reduce heat to 375 F and bake another 35-40 minutes or until pie is cooked through and dough is golden brown. 

Notes

If the edges begin to brown too quickly or burn, wrap lightly with foil for the remainder of cook time.
