Matcha Chia Seed Pudding Benefits

This overnight chia pudding has so many benefits it’s hard to list them all. I mean, to start, it’s a gorgeous green color that’ll get you in the springtime mood! I’d be sold on that alone, but here are a few more reasons you’re going to love this matcha chia pudding:

  • It’s super quick and easy! This recipe takes only 10 minutes to mix up, then you can leave your matcha chia seed pudding overnight to achieve maximum creaminess.
  • We all love meal prep – it makes life so much easier. This recipe makes 4 servings, so you’ll have your pudding ready to grab and go for pretty much the whole week.
  • The caffeine! Matcha has just as much caffeine as coffee, so it’ll certainly give you the boost you need to start your day.
  • It’s matcha chia seed pudding healthy? Heck yes! This overnight breakfast is as wholesome as they come. Matcha has tons of health benefits and the chia seeds are packed with fiber and protein. You can’t go wrong!

Ingredients

chia seeds, maple syrup, matcha, milk, and vanilla

Only five simple ingredients make up this delicious overnight chia seed pudding. You can also build upon this recipe (or swap out some ingredients) to make it your own!

  • Matcha Powder
  • Milk (Almond, coconut, or dairy)
  • Vanilla Extract
  • Pure Maple Syrup
  • Chia Seeds

Ingredient Additions and Variations

  • Add some different flavors and/or spices. You can add chai for a matcha chai chia pudding (how fun is that name?), or some pumpkin pie spices to give it a little fall flair.
  • The floral flavors of lavender would pair beautifully with the earthy taste of matcha.
  • Add vanilla protein powder for a little extra sweetness, flavor, and protein.
  • Mash up a ripe banana and mix it into your pudding.
  • Omit matcha altogether and use cocoa powder if you’re looking for a chocolatey breakfast that’s still wholesome.
  • Mix in a dollop of nut butter!
  • Add toppings! You can top your pudding with everything from berries to nuts, coconut flakes to seeds.

Recipe Tips

  • What if I don’t like the texture of chia seeds?
    • You can blend your pudding to break down the chia seeds even more. I also suggest using this pudding as an ingredient in other things, like maybe a parfait, so you can combine the pudding with other textures.
  • Use the right matcha!
    • There are different grades of matcha: ingredient, culinary, and ceremonial. I would suggest using culinary or ceremonial-grade matcha for this recipe since you’re eating it in a more pure form.
  • Mix, mix, mix!
    • Make sure you stir up your pudding well and good at the beginning, middle, and end of the recipe. The matcha needs to be well incorporated, and then the chia seeds need to be well soaked in the liquid, and then you need to mix it all up again before eating. The seeds can clump together, so you can give the pudding a good stir or shake every once in a while to help them distribute more evenly.
