No Bake S’mores Bars

These no-bake s’mores bars are a simple, no bake, 5 ingredient recipe that you will be making all summer long! These s’mores bars are made with three easy, no-bake layers filled with graham cracker crumbs, a creamy chocolate filling and toasted marshmallows. These s’mores bars are a must for any summer party!

There are a handful of recipes that I crave right at the beginning of summer. Peach blueberry pie of course and a batch of strawberry peach frosè are total necessities #poolside. I’ll also be making Lindsay from Weeknight Bite’s Heirloom Tomato Salad with Herbed Ricotta on repeat!

But no summer is complete without a melty, toasty, and gooey S’MORES!

When I was 18,19 and 20 I spent my summers in Pennsylvania working at a summer camp in the Pocono mountains. I was a counselor for a sleep-away camp for girls (pretty much the Lindsay Lohan’s life in the parent trap).

It seemed like once a week we were roasting s’mores over an open fire. Growing up in California we would always toast marshmallows over the bbq coals after dinner so I loved the authenticity that camp brought to the s’mores. Every since those summers, a seasonal s’mores night was necessary.

I’m also just a sucker for s’mores flavored desserts. I mean… can we just have a moment for the Starbucks s’mores Frappuccino?! Good laaawrd! So good!

If you live somewhere that is super rainy in the summer time (hello east coast) these no bake s’mores bars are perfect for those nights in. Also I’m 100% certain that all of my girlfriends are going to devour these at our next summer party. Make these ahead of time for a great summer night treat. 

What’s in a s’mores bar?

    • Chocolate chips!
    • Graham cracker crumbs
    • Brown Sugar
    • Marshmallows (lil or big ones!)
    • Butter

How do you make a s’mores bars?

  • You will need 5 simple ingredients to get started: chocolate chips, brown sugar, butter, marshmallows and graham cracker crumbs. You can pulse your own graham cracker crumbs or buy them pre-ground, totally up to you! Same with the marshmallows! I like smaller ones because they had more texture but big marshmallows toast up just as well!
  • Bring together your brown sugar, melted butter, and graham crackers in one bowl (this will be the base of the bar).
  • In a separate heat-proof bow you will melt your chocolate chips and butter together for the creamiest, ganache like chocolate center! 
  • Layer everything up and top off with plenty of marshmallows! 
  • Toast your marshmallow layer with a kitchen torch or under the broiler for 1-2 minutes. Pop the bars in the fridge to chill for 30 minutes and you’re good to go!

Ingredients

For graham cracker layer:
3 Cups of graham cracker crumbs (8-10 whole crackers)
1 1/2 Cups of melted butter
1/3 Cup of brown sugar
For the chocolate layer:
1 Bag of chocolate chips (I used dark chocolate)
1/2 Cup of butter, melted
1 teaspoon of vanilla extract, optional
For marshmallow layer:
1- 16 oz. bag of mini or large marshmallows

Instructions

Blend graham crackers in a food processor until fine and sandy if they are whole.
 
Add crumbs to a large bowl and melted butter and brown sugar until well blended into a course sand texture. Line a 9×13 pan with parchment paper. Press graham cracker mixture evenly into the pan and press down.
 
In a separate large glass bowl add in chocolate chips and butter. Melt in the microwave in 30 second increments until smooth and melty. Stir in vanilla extract. Pour chocolate mixture over compressed graham cracker layer. Sprinkle with a generous layer of small marshmallows.
 
Afterward, place the platter of bars into the refrigerator for 1 hour to firm up. Broil briefly for 1-2 minutes or use a kitchen torch to brown marshmallows. Cut and serve.
