Pumpkin Spice Dalgona Coffee Recipe

This pumpkin spice dalgona coffee recipe is made with pumpkin infused milk and topped with a pumpkin spiced whipped coffee top that smells better than any seasonal candle. If you love a pumpkin spice cold brew, this festive dalgona coffee is for you.

Dalgona coffee was the tik tok coffee sensation this year. While we spent more time at home, we fell in love with this luscious, easy to make whipped coffee. Naturally, I decided it needed a pumpkin spice flare #tistheseason. 

This dalgona coffee has pumpkinized in two delectable ways. The milk is infused with pumpkin puree and the whipped coffee topping is speckled with pumpkin spice. Each sip is filled with a sweet pumpkin spice essence. 

This easy coffee drink comes together in five minutes or less and is made with milk, instant espresso, sugar, boiling water, pumpkin spice and pumpkin puree

What is dalgona coffee? 

Dalgona coffee is made by whipping together equal portions of instant espresso, sugar and boiling water (1:1:1).

The whipped coffee topping is topped on iced or hot milk and then stirred together before drinking. What started as a Korean drink grew insane popularity on tik tok this last year as people started making their own coffee drinks at home.

What does dalgona coffee taste like?

In certain sips I think it tastes like a latte and in other sips it tastes a bit more frothy. The closest think I can describe it to is the pumpkin spice cold brew drink at Starbucks.

It’s structure is similar as there is an iced base layer (the milk) and it’s topped with a slightly sweetened pumpkin coffee foam.

Ingredients for Pumpkin Spice Dalgona Coffee: 

  • instant coffee or espresso (I used espresso)
  • sugar
  • pumpkin spice 
  • boiling water 
  • milk (dairy, nut, seed, any kind!)
  • pumpkin puree

Instant coffee vs Ground coffee 

For this recipe you must use instant coffee. I know what you’re thinking… instant coffee?! I’m with you. I love my espresso machine as much as the next girl but if you’re looking for this authentic frothy coffee sensation, instant coffee or espresso is where it’s at. 

Instant coffee vs ground coffee are two different animals.

Ground coffee is well… ground coffee. It won’t disintegrate into the foam like instant coffee will. Instant coffee is usually freeze dried. Which means coffee extract is frozen and cut into small pieces and then dried at a low temperature under vacumm conditions. If you want to get real ‘history channel’ about instant coffee, this video is for you.

Is dalgona coffee sweet?

Dalgona coffee is slightly sweet.

The whipped coffee mixture on top is slightly sweetened with some sugar.

If you’re looking to make this drink sweeter, I would recommend adding in 1 tsp of simple syrup or sweetener at a time to your milk until your sweetness level is desired.

I find that sweetening it this way for this pumpkin spice version made the drink taste more like a classic PSL or a Starbucks pumpkin spice cold brew.

How to make this Pumpkin Spice Dalgona Coffee Recipe

  1. Make the frothed coffee: Add in the instant coffee, sugar, pumpkin spice and boiling water to a bowl.
  2. Whip the mixture: Using an electric mixer, beat for 3-4 minutes or until mixture is stiff and pale in color. 
  3. Prepare your milk: Pour 16 oz of milk (hot or iced) into a measuring glass and whisk in the pumpkin puree until smooth.
  4. Pour milk evenly into two large glasses and top with crushed ice (or steam/boil, if hot milk is desired).
  5. Top each glass with half the foam mixture. Use a spoon or a straw to mix the mixture into the coffee.
  6. Top with a dusting of pumpkin spice before drinking!

What kind of sugar can you use to make dalgona coffee?

The best sugar to use for dalgona coffee is just good ole white granulated sugar.

The reason why white granulated sugar works the best is because it acts as a stabilizer sort of like how meringue or whip cream is made. I’ve seen people on insta make it with brown sugar and coconut sugar and while it works and tastes great, it won’t get as fluffy as regular sugar.

Can I use hot or cold milk?

Yes, you can use hot or cold milk for this pumpkin spice dalgona coffee recipe. I’m an iced girl myself, but either one will work! Be sure to give the drink a good stir with a straw or a spoon before drinking.

2 tsp pumpkin spice + more for topping

4 tbsp boiling water

Milk (dairy, nut, seed, any kind!)(I used sweetened almond milk)

2 tbsp canned pumpkin puree

Notes

Sweetener: I used a slightly sweetened vanilla almond milk which provided a nice hint of sweetness. If you like your coffee drinks very sweet, I would suggest whisking in a liquid sweetener or simple syrup 1 tsp at a time.
