Description
Strawberry and Cream Overnight French Toast is an easy breakfast to prep the night before and enjoy the next morning, warm from the oven!
Ingredients
Strawberry French Toast:
3 cups Strawberries, quartered (and divided)
Zest of 1 Lemon
Juice from 1/2 lemon
1 cup Jam (strawberry preferred)
1 loaf Brioche, Challah, or French bread, cut into cubes
6 large Eggs
1 cup Milk
1/2 cup Heavy Cream
1 Tablespoon Vanilla Extract
1/4 cup Honey
1/2 teaspoon Salt
Vanilla Bean Whip Cream:
1 cup Heavy Whipping Cream
2 Tablespoons Sugar
1 Vanilla Bean, sliced down the center and seeds scraped
1 teaspoon Vanilla Extract
Maple Syrup + Powdered Sugar, for serving
Instructions
Strawberry French Toast:
- In a small bowl, mix together 1 cup of strawberries, lemon zest, lemon juice, and jam, set aside.
Preheat oven to 350 F.
Place bread cubes onto a large baking sheet and bake for 8-10 minutes, or until toasty and lightly golden.
In a large mixing bowl, whisk together eggs, milk, heavy cream, vanilla extract, honey, and salt.
Place the bread cubes into a large casserole dish and pour egg mixture evenly over the top. Dollop bread-egg mixture evenly with strawberry jam mixture. Cover overnight French Toast and refrigerate overnight. (Or, if you are short on time, a minimum of 30 minutes).
Preheat oven to 350 F. Remove casserole dish from refrigerator for at least 30 minutes. Uncover and bake overnight French Toast for 35-45 minutes, or until tops are golden brown. Serve with vanilla bean whip cream, maple syrup, and powdered sugar.
Vanilla Bean Whip Cream:
- Using a hand mixer or a stand mixer fitted with a whisk attachment, whip the heavy cream, sugar, vanilla bean seeds, and vanilla extract on medium-high speed until medium peaks form, about 3-4 minutes.
