Honey Lemon Garlic Salmon

My fingers reek. 

My fingers smell like a garlicy - salmony love affair. Aside from having garlic fingers this salmon is deeeelish.

When I'm having a crazy busy week I love a super quick + easy dinner I can throw together. If I'm really really really busy I just go to chipotle ;) but thats another story... Alright so you can literally get this salmon together and eat it in an hour. So basically..

Salmon Hour

6:00 PM: Get home from class + gym 

6:02 PM: Take shoes off + pee

6:05 PM: Wash hands, make 6 ingredient honey-lemon-garlic marinade 

6:10 PM: Pop salmon in the fridge for 1/2 hour

6:12 PM: Take a shower

6:40 PM: Pop salmon in the oven

6:45 PM: Put my feet up + check email + turn netflix on 

6:55 PM: CHOW!

Honey Lemon Garlic 

Salmon

1-1.5 Lbs of Salmon Filets (3-4 pieces)

         Salt + Pepper

For the Marinade

1/4 Cup Olive Oil
2 Tablespoons of Honey
2 Tablespoons of Minced Garlic
1 Tablespoon of Fresh Minced Rosemary
1 Tablespoon of Fresh Minced parsley
1 Tablespoon of Lemon Zest + juice from 1/2 lemon

Preheat oven to 425F degrees 

In a small mixing bowl combine olive oil, honey, garlic, rosemary, parsley, lemon zest + juice
Pour marinade evenly over salmon and cover. Refrigerate for 30 minutes to an hour
Sprinkle a few pinches of salt + pepper on salmon
Bake on a baking sheet or shallow oven-safe dish for 15-20 minutes until salmon is flaky and reaches 145 degrees farenheit

pairs well with sautéed asparagus + wild rice + chardonnay
