Pomegranate Pineapple Granita with Bai
We are all feeling it today. The holidays always leave me bloated and in the need for a mini detox! There is something about that third piece of pie that I can't say no to on Thanksgiving. No regrets though! I'm sipping on Bai pomegranate antioxidant infusions and I also made GRANITA! Granita is a cool and refreshing snack that can also be super healthy!
Pineapple is great for your gut after you've abused it a little bit through the holidays. It has a large amount of fiber and digestive enzymes to keep you on track after you've filled it with practically everything on Thanksgiving. Be sure to use fresh pineapple because you're going for freshness and low sugar. Canned pineapple easily has double the amount of sugar than regular pineapple because it has been sitting in usually some type of corn syrup. Pomegranates are not only a burst of flavor but they also provide more antioxidants than most green tea and wines, so don't be shy of these power packed seeds! This granita should do the trick after thanksgiving and get you back on track.

Pomegranate Pineapple Granita with Bai
5 Cups of fresh pineapple chunks
4 Fresh mint leaves
16 Oz of Bai Pomegranate infusions
1 Cup of pomegranate seeds for sprinkling
Combine pineapple chunks, mint leaves and pomegranate infusion into a blender. Blend or pulse well until ingredients are incorporated. In a sheet pan pour mixture and freeze. Every 20-30 minutes scrape mixture with a fork to keep creating granita consistency. Once you have reached desired texture (about 1.5 hours frozen) serve in bowls and top with pomegranate seeds and fresh mint leaves.
