An apple + cheese epiphany
Apples + Sharp Cheddar Cheese + Rosemary = Mother of all Healthy Snacks
I probably eat at Panera Bread at least twice a week. It's my go to "fast" food when I don't have time to cook. I ordered the Fuji apple salad which is so delicious! Pecans, chicken, gorgonzola cheese, and crunchy apple chips on top! Jared kept picking at my apple chips (they are the best part!) until I barley had any left! Before I noticed we were both eating them off the top leaving the poor salad naked. And then! We looked at each other and we just knew. I've gotta make these little crunchy guys! I've been looking for more alternative healthy snacks rather than dry rice cakes and carrot sticks. I also thought, apples and cheese are like one of my favorite flavor combos, EVER!
Thus, the apple cheddar chips were born. Red delicious, granny smith, and pink lady apples were amongst the pickins'. I'm not fortunate enough to have one of those awesome mandolins so I went old school and thin sliced them with a knife. If you do have a mandolin break that bad boy and slice up your apples pretty thin. Mine were a little lopsided but they still curled up for a great crunch. Make sure you decide to make these when you have some time on your hands. They bake low and sloooow.
Cheddar Apple Chips
4 Apples (Thinly Sliced)
1/2 Cup of Shredded Sharp Cheddar Cheese
2 Tablespoons of Minced Rosemary
Preheat oven to 200 Degrees Fahrenheit
Thinly slice your apples by hand or with a mandolin. Arrange apple slices on a baking sheet lined with parchment paper.
Bake your raw apples in your preheated oven for one hour. After an hour, flip your apple slices. Distribute cheese and rosemary over cheese evenly. Bake for another hour. Edges should be curly. The chips will harden up more once they have cooled.
Note: you can sub the cheddar + rosemary for cinnamon + sugar
I used granny smith, pink lady, and red delicious apples
yeilds 4-5 cups of chips
